I now have a tiny helper in the kitchen when I bake, and while I have visions of a flour explosion so far baking with a 2 year old has been great!  The trick is preparation.  While Maddy has her afternoon nap, I get everything ready in the kitchen. I move Maddy’s Ikea Latt from the Living Room into the Kitchen so she has a surface at her level to measure and stir, get all the bowls, utensils and ingredients out and cut up the ingredients she can’t help with (for this Cranberry Orange Loaf recipe that included cutting up the cranberries and zesting the orange).

I will admit that I’m not brave enough to give Maddy free range on measuring yet (visions of flour explosions) but she loves dumping out the measuring cups and stirring! With a little bit of prep work, baking is a great toddler activity with a yummy outcome 🙂

Now onto the recipe!

This recipe comes from my husband’s family and he was craving a less sweet treat over Christmas so he made two loaves, one for home and one for sharing. Its the first time I ever had cranberry loaf and it is amazing! The cranberries add a fresh tartness while the orange just brightens up the flavours.

This Cranberry orange loaf was so popular with my family, that two week later Maddy and I had to make more!

Ingredients

2 cups flour
1 cup white sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt

2 cups fresh cranberries halved
1 egg
3/4 cup orange juice
1-2 tbsp orange zest depending on how much orange flavour you like

Note: I often make two recipes so that I can freeze a loaf for later.

Instructions

Preheat your oven to 350 Degrees F. Grease a large loaf pan with butter and set aside.

In a large mixing bowl add your dry ingredients and stir together.  Then add cranberries and stir well.  The the cranberries rest with the dry ingredients for at least a minute or 2 but ideally 10 minutes.  This step will help the cranberries mix evenly in the loaf and not all rise to the top (the magic of baking).

Then start adding the wet ingredients to mixture.  When you first start mixing you will think that there is not enough liquid but don’t worry it comes together.  The final mixture will be sticky almost like a pizza dough, this is normal.

Bake for 35-45 minutes. Test the loaf with a wooden stick or dry spaghetti noddle.  When it comes out dry its done.
